Honey with a balanced fructose and glucose content (accounting for 30% and 39% respectively of the total natural sugars present), which is why it crystallizes slowly and generally retains a creamy and soft consistency long after bottling.
The flavor is bold, aromatic, balsamic (with camphor, mint, and medicinal herb notes) and slightly astringent. The aroma is also fresh and balsamic, reminiscent of linden flower herbal tea.
This nectar is collected by bees from Tilia cordata plants (mountain linden) at around 1,000 m above sea level in July.
Linden honey may sometimes contain some chestnut nectar due to the overlapping blooming periods if the bees are located in a mixed woodland area. In this case, the honey has a bolder, slightly bitter aftertaste.
This honey is highly recommended for sweetening teas and herbal teas, giving the beverage a balsamic aroma that can also be enjoyed by inhaling the warm steam rising from the cup.
In cooking, it can be used in fish dishes (for example, to marinate cuttlefish for a few hours before sautéing them with artichokes and thyme), or in the preparation of panforte and castagnaccio.
