Spring wildflower honey
Nectar collected by bees from wild cherry blossoms, meadow and woodland flowers, along with the first acacia blossoms. Liquid and golden, with a sweet and pronounced flavour and persistent notes of sour cherry and fruit.
More information
This honey has an extremely variable composition, with characteristics that depend from year to year and on the location, on the various nectars collected by the bees:
this spring wildflower honey contains nectar from wild cherry blossoms (which in our area bloom around the first week of April), field flowers and the first acacia blossoms, which precede the more extensive flowering, later harvested separately in its pure form. The presence of cherry blossom and field flower nectar, which is predominantly glucose, means that over time this honey tends to crystallise, gradually becoming creamier as the months pass. To return it to a liquid state, even after many months, simply heat the (open) jar in a bain-marie for 15–20 minutes, taking care to keep the water below 50°C so as not to compromise the quality of the product.
The taste is very sweet and intense, while the aroma is warm, with sour cherry and almond notes typical of cherry blossoms, combined with the delicate floral notes of acacia.
This type of honey is ideal as a sweetener for fresh fruit salads and over fiordilatte ice cream, and when crystallised, can be spread on toasted bread and topped with a seed mix or chopped hazelnuts.
